When my Grandmother, Miss Nona, passed away, she left me her magical box of recipes: inside was full of enchanted, delightful recipes for sweets of all kinds! And so, this is where I start when looking for a cookie recipe.
My search found her Tea Cookies, and together with Matcha Powder for goodness and greeness, we had the base for Yoda Cookies!
Yoda Cream Filled Cookies

Cream Cookies are freshly baked using Matcha Powder and a sweet vanilla cream
filling.

ingredients
Cookies
3 cups all-purpose flour
1 teaspoon baking powder
pinch of salt
1 Tablespoon Matcha Powder
1 teaspoons of lemon zest
1 teaspoon of vanilla extract
2 sticks of butter, softened
1 cup sugar
1 egg

Filling
1 stick butter
2 cups powdered sugar
2 teaspoons vanilla extract

instructions
1.Sift into a medium bowl the flour, baking powder, salt
and matcha powder. Next whisk in lemon zest. Set aside.
2.In another medium bowl or mixer bowl, beat the butter
and sugar until combined. Add the egg and then vanilla.
Slowly add in the flour mixture until it is thoroughly mixed.
3. Split the dough in half, roll into balls and wrap in
plastic wrap. Chill until you are ready to use.
5. Roll out the dough using powdered sugar instead of
flour to coat your rolling surface and rolling pen. Roll the dough to
about 1/4 inch thick.
6.Use your cutter to cut out the shapes and transfer
onto the baking sheet.
8.Let cool on a wire rack.
10. Using an electric mixer, beat the butter until
creamy. Add the powdered sugar slowly until completely mixed. Add
the vanilla and beat until creamy.
11. Spoon or pipe about a tablespoon of filling on the
flat side of one cookie. Press another cookie to top to create a
sandwich. And you are done!

I am sure my Grandmother would be proud and pleased! This is a simple, easy way to add Star Wars to any party!
